Stir-fry White Bittergourd & Pork

This recipe celebrates cooking with Taiwanese white bitter gourd (bitter melon), which is available seasonally. The bitter gourd is stir-fried in a deliciously savoury spicy soybean paste along with slices of pork. This recipe works just as well with the usual green bittergourd too.
