[I ate] Bison Tartare and GF Duck Breast

Aalto Restaurant, Jasper, Alberta. 2025-06-12.

Bison Tartare ($23 CAD): Roasted Pistachio, Mustard Seed, House Chips, Pretzel Crostini, Pickled Shallots and Mushrooms. Beautiful plating and accompaniments were perfect but the flavour was surprisingly bland. Chopped a bit more coarse than I prefer. Also no quail egg.

Perhaps I am spoiled as L’express in Montréal is the standard by which all Tartar must be judged. Not impressed but admittedly a beautiful dish.

Duck Breast GF ($42 CAD): Charred Carrots, Parsnip Purée, Saskatoon Berry Jus, Fennel Pollen. Perfect dish. Parsnip purée balanced the rich umami of the slightly smoked duck. Perfectly cooked with slight crisp to the skin. Carrots’ sweetness and char matched really well and the jus tied it all together. Surprisingly large serving as well. Paired great with a local IPA.
