My take on Soto Ayam (Indonesian style turmeric chicken soup). The soup base is a paste of garlic, shallots, lemongrass, ginger, salt, pepper, and turmeric, mixed with chicken stock. My comfort dish when I get a cold. Nobody does a chicken phở like the Hanoians. Soft fresh noodles that soak in more broth. There is a reason why the Michelin chef, Peter Cuong Franklin flys in Hanoi noodles for his $100 phở bowl. Free-range chicken.
