[homemade] Soto Ayam

My take on Soto Ayam (Indonesian style turmeric chicken soup).

The soup base is a paste of garlic, shallots, lemongrass, ginger, salt, pepper, and turmeric, mixed with chicken stock.

Toppings are cilantro, green onions, cherry tomatoes, fried shallots, shrimp crackers, and a hard boiled egg (not pictured).
Traditionally people add celery leaves and bean sprouts though I left them out due to personal preference.

Potatoes, carrots, caramelized onions, simmered for a while until everything is soft, with poultry seasoning, chicken soup base, water, pepper, celery salt, dill and garlic.

Hit it with an immersion blender, add milk.

Topped with Bacon, Green Onions and Slicers of Asiago.
