I decided to do braised short ribs for my birthday, because I'm sadistic like that. It only takes about 4 hours, but who wants to do that on their birthday? Not this guy. So I started two days before. Trimmed and dry brined the short ribs. Mistake. If you make this recipe, don't dry brine the ribs. I couldn't reduce the sauce enough (as seen in the photo) because if I had, it would have been too salty. I couldn't think of a way to make it less salty, so if you have an idea to decrease the salinity of a red wine sauce, send it. I added almost no salt during the cooking process, because I knew the salt was going to leach from the ribs, so I wanted to wait a bit until I'd reduced it. Next day I cooked them, simple as. Not a difficult recipe, but the results are stellar. Those are easily amongst the best short ribs I've ever had, restaurant or not. Highly recommended. [link] [comments] |
