I recently bought a whole chicken that is slow grown and pasture raised. The only problem with these chicken is that they are not as tender when roasted so instead, I cooked it in coconut milk with lemongrass for an hour and half. I seared it first with some butter and added ginger, garlic, cilantro and some lemon wedges and then cooked it in oven at 375. Ate it over a bowl of jasmin rice. or was basmati.
