Pizza night! I tried another pan pizza this week. A little thicker than last week with a 75% hydration 3 day dough. Texture was very light with a nice chew. Toppings were mozzarella, Scamorza, creamy tomato sauce, grated Pecorino Romano, Polish Hunter’s style bacon, shiitake mushrooms, sautéed leeks, creamy tomato sauce, seasoned ricotta, and finished with fresh basil.
