- 3 ripe bananas (should be 300g~)
- 200g wheat flour (can use different types. Whole wheat flour / Rye flour / Spelt flour. I only had the "standard" one at home)
- 2 tsp cinnamon (try around how much you like to use. I measured it by eye. Should be around 4g)
- 100g Grated apple or sugar-free applesauce (for structure, I didn't taste it. You could remove the apple and use fat like 80g of butter)
- 1/2 packet of baking powder (7-8g~)
- 2 eggs normal/medium size (around 60g each)
- 50g chopped walnuts (you can use almonds or something else if you want to try)
- a pinch of salt (I didn't do that. But I'd add that for the next time. So try it if you want)
-
Peel, core, and finely grate the apple, Peel the bananas, add them to the apple, and mash well. Then beat with the two eggs until frothy.
-
Combine flour, baking powder, cinnamon, (+a pinch of salt if you used it). Add to the banana, apple, and egg mixture, and mix briefly but thoroughly. Finally, fold in the chopped walnuts and pour everything into a greased loaf pan. I used baking paper so I didn't even need to use fat :D
2.1 You can use something else like muffin tin. Then you get a cool little bite size bread! (baking times may need to be adjusted slightly!)
- Now bake in a preheated oven at 180°C (top/bottom heat) for about 45 minutes. Do the toothpick test.
Be sure to let it cool thoroughly before slicing! The entire loaf has about 1524 kcal. So you can measure that by eye when you slice it.
Have fun!
