i might have slightly underbaked them. but they were delicious and my neighbors were extremely happy for 6-8 servings
-preheat oven to 150C - heat up 730ml Heavy cream (around 80C) - In a bowl, whisk 3 eggs (around 150g) and 150g sugar, temper the eggs with the heavy cream - in a different bowl put in chopped 45g cocoa mass and 175g of 60% dark chocolate. pour the hot egg/heavy cream mixture on top and leave for a minute. - mix with blender to homogeneous mass -sift through a sieve - Pour in ramekins, bake in water bath for 30-40min at 150C. cover lightly by putting a baking sheet on top.
