[homemade] Best pizza I've ever made!

Used a Lodge cast iron pizza steel, set the convection oven to 550 (highest temp) and baked for about 7-8 minutes. The undercarriage was simply fantastic and the best I've ever baked in my home oven! Crispy all around with some charred portions is my favourite! I try to recreate Krispy Pizza's style using the following recipe that I've honed over the last year:

Small pizza dough recipe : 170g of bread Flour 4g of sugar 3g of salt 2.5g of yeast (half tsp) 105g of warm water 2 tsp of EVOO Makes one 280g crust

Large pizza dough recipe: 235g of bread Flour 5g of sugar 3g of salt 3g of yeast 1 tbsp of EVOO 140g of warm water Makes 1 375g crust

Mix Small and Large dough recipes to make 2, medium 335g crust

  1. Mix well
  2. Cover and let rise for 1 hour.
  3. Shape doughballs and store in fridge for at least 24 hours but no more than 36 hours.
  4. Stretch, top and bake.
