[homemade] Chicken & Leek Pie

I’ve played with variations of chicken pot pie for years. It was a childhood staple in my house with condensed soups. As an adult I’ve always wanted to develop it into something more flavorful and complex while still resembling my moms. This was my most unique try for a few reasons -

  • Lots of leeks and onion made it teeter toward a veggie pie
  • Instead of a whole chicken I used thighs and hard seared them skin on. I chopped the crispy skin up finely and added them into my filling. This added a smokier, more chicken forward flavor. The thigh meat also added a more tender texture vs using a mixture of shredded pieces.
  • Lots of tarragon & parsley added to the vegetal fresh taste
  • I used an extra concentrated chicken stock left over from a double batch of pozole I had frozen. This made a very decadent roux that made the filling even better in the leftover pie

Overall I really liked the different flavors those unique techniques delivered.
